Fig and Apple Stuffed Pork Rib Rack with Garlic Butter Dutch Carrots

What you’ll need

  1. 1x SunPork Pork 10 Rib Rack
    1x Onion
    1x Pink lady apple
    2x Figs
    6x Garlic cloves, minced
    3x Sage leaves
    1x Cup breadcrumbs
    1x Egg
    1x Tsp Lemon zest
    Kitchen twine
    20x Dutch carrots, peeled
    3x Tbsp. butter

How to make it

  1. Preheat a fan-forced oven to 180ºC
  2. In a food processor, combine onion, apple, figs, 2 garlic cloves, sage
  3. Leaves, breadcrumbs, egg, and lemon zest. Process until smooth.
  4. Place the rib rack on a chopping board bone side down. Holding your
  5. Knife at a 45º angle, start at the meaty end of the rack, and slice along
  6. the bones about 2cm deep – ensuring that you do not separate the loin.
  7. Rotate your knife towards the centre of the meaty portion and continue
  8. to slice and unroll the loin. It should look like a flat piece of meat, still
  9. connected to the bones.
  10. Spoon the stuffing into the centre of the pork, leaving 2cm at both ends
  11. empty.
  12. Fold the pork back towards the ribs and secure the meat in between
  13. each rib with kitchen twine.
  14. Roast for 2 hrs.
  15. Meanwhile, heat a large fry pan over medium heat. Melt the butter then
  16. simmer the remaining garlic and carrots for 5-6 mins until tender.
  17. Serve the rib rack with garlic-buttered carrots and enjoy!
